
It was supposed to be an enchilada casserole.
That was my motto for this evening, as well as my usual advice to anyone before a cabinet or fridge with a blank face and no clue as to what to make of its contents. Google what you have (or “got” as I like to say) and find a recipe to match! And if you’re anything like me, you think you’re Rachael Ray and will end up going on a total tangent and creating your own recipe.
Here you have my vegetarian enchilada casserole, which was born out of this simple enchilada recipe and the liberties and deviations from the original recipe I comfortably felt like taking only because I watch Rachael Ray every morning. Oh, and my cousin Kim helped out a bit.
I knew that all of the ingredients for a mean vegetarian enchilada (casserole) were in my possession. But it was Google, the big internet miracle, that helped me (somewhat) coherently conjure up tonight’s main entree. Oh, and my cousin Kim was there, too. I’ll casually mention now that my cousin successfully executed it all, but, thanks only to my animated recipe reading skills and direction.

I boiled more than two cups of water for the rice, and later, I paid the price!

Goya Arroz con Frijoles Negroes gave me another reason to practice my Spanish.
